How This Creamy Ranch Chicken Dinner Became a Family-Approved Favorite
Usually meal planning for the week is a must-do for Sunday evenings but some weeks I just don’t have it in me to plan another thing. Moms, you feel me.
So this means weeknight dinner’s become a 2:00pm “what should I take out of the freezer that’ll quickly thaw” brain twister.
One night recently, I had chicken breasts thawed and waiting to be prepared and some leftover homemade dry ranch seasoning.
Running to my phone, a quick internet search yielded this gem of a recipe idea. Per my usual, I’ve taken probably a perfect dinner recipe and added my spin on it because I really don’t follow recipes to a T and usually don’t have all the ingredients I need to make it. That’s a laugh now that I’ve started a recipe blog for you! But stick around, I promise I can be trusted in the kitchen!
What was just a “try it and see” recipe has made its way onto our weekly dinner list of rotating favorites! I encourage you to give this easy recipe a try.
Below you’ll also find some creative side dish pairings and ways to use the leftovers later.
Ranch Fans Will Approve
Our kids are a bit picky but neither has tried a ranch flavored morsel of food they don’t like yet.
Ranch is just one of those flavors that pleases most crowds! I say “most” because we all know there’s gotta be someone who objects and goes against the grain. Always is.
But I digress.
If your family loves all of the ranch flavored things, this is definitely one to try. Rich and savory, it’ll warm you up and fill up tummies too!
Bonus: using the homemade dry ranch recipe means no added junk chemicals our bodies don’t need.
Pro Prep Tips
- You can add dry seasonings to a plate and mix quickly with your clean fingers or a spatula.
- Another easy option is to add seasonings and cooled down melted butter to a zip top bag. Shake well to coat chicken.
- Make the homemade dry ranch seasoning ahead of time and using this recipe will yield enough for two different recipes like this creamy ranch chicken dinner and ranch potato soup with bacon crumbles.
How Can I Use the Leftover Creamy Ranch Chicken Dinner Sauce?
If your family doesn’t lick the skillet clean of any leftover sauce, be sure to save it for other meals! Our family is all about stretching a meal to make others. Like these ideas with one whole chicken.
Tomorrow’s lunch can include creamy ranch chicken sauce poured over:
- a baked potato
- leftover mashed potatoes
- cubed and roasted potatoes
- rice
- steamed cauliflower and broccoli
- quinoa
- pasta noodles
- roasted asparagus
- roasted butternut squash
- The possibilities are endless!
Moreover, if you’ve got any of the chicken breast left over, cut the chicken breast into cubes and toss them into the sauce. Then add the cubed and sauced chicken to a:
- tortilla wrap and top with shredded cheese and perhaps bacon bits for a lunch taco
- bowl of mashed potatoes with some roasted or pan-fried corn kernels then sprinkle with cheese
Ranch is kinda like bacon… it’s tastes great with just about anything!
