Read the Fine Print
Are boxed mixes just easier? Yes! Are they affordable? Generally, also yes. Are they jam packed full of unnecessary ingredients? Unfortunately, yes.
My son has a peanut allergy so reading labels has been a thing for our family for over 10 years. At first his allergy was mild and as long as it wasn’t a direct, whole peanut ingredient, he was fine. Meaning, if it was “manufactured” around or “may contain” peanuts, he was generally okay. These are sort of “CYA” style warnings companies add to their packaging just in case.
Food Allergies Cannot Be Taken Lightly, Ever.
A few summers back he had two reactions. Thankfully his reactions are little red bumps on his chest and back and sometimes red and puffy lips. No scratchy or itchy throat.
Long story short, it was a brand of chocolate chip cookies that were “processed in a factory that also processes peanuts”. That was the day we agreed absolutely no more chances taken on pre-packaged foods. Every label must be read, twice. We learned at his appointment later that year that his allergy had increased from mild to moderate.
“Nutrition” Labels
Undeniably, reading labels is one of the hardest things to teach folks who have little to no experience with food allergies. Most think “well, it’s not a peanut butter cookie, he can have it.” When in reality, those chocolate chips in that cookie were made in a factory around peanuts and the risk of cross contamination is significantly higher.
Basically this story is what made me start actually paying attention to food labels. It was the day I saw that our beloved pancake mix that did not have a peanut warning on it contained something else alarming.
Food coloring. Two to be exact. Now, you’re probably thinking: “why would a white/off white pancake mix NEED two food dyes?” Trust me, I asked the same thing. Essentially, the term “nutrition label” should be used loosely.
Ditch the Box Mix
Immediately, I put the box back and said “nope, that does not make sense”. Then came the deep dive into artificial food coloring and flavorings in the food I purchase for my family to eat.
It wasn’t pretty.
Now that has been two years ago and we couldn’t be happier with the switch to eggless pancakes from scratch in our house. Even my son has learned how to make them without my help.
Furthermore, as a food allergy sufferer, the best thing we ever did was teach him how to read labels before he could read a chapter book on his own. We even let him play in the kitchen, learning how to read recipes and make his own desserts that are from scratch and safe for him to eat.

Why Do Pancakes Need Eggs Anyway?
Eggs provide the extra structure needed to make the pancakes rise and keep the bubbles. The yolk adds a nice flavor and richness to the recipe. Too much egg and your pancakes will be very dense. On the flip side, not enough egg and your pancakes will be crumbly.
You’ll find this eggless pancake recipe is light, fluffy, yummy, and require NO eggs. Every one will approve and no one will realize there aren’t eggs in it if you don’t make a big deal over it.

Egg Substitutes
Fortunately there are many substitutes for eggs in recipes. A simple internet search should help but here are a few:
- applesauce
- mashed banana
- yogurt
- buttermilk
- arrowroot powder
- flaxseed or chia seeds
Do Eggless Pancakes Taste Good?
Here is the question everyone wants the answer to. Immediately, YES.
One evening we had breakfast for dinner on the menu but we had no eggs. My son was determined to have pancakes for dinner as he is a connoisseur of all sweet things and had a hankering for syrup. Off to Pinterest we went to find a pancake recipe that met my laundry list of requirements:
- simple, wholesome ingredients
Just kidding on the long list part because these days my requirements aren’t unrealistic. Simply looking for actual food and nothing added extra for “appearance”. Real food ingredients our bodies will recognize and thus, be able to process, please.
Are Eggless Pancakes Vegan-Friendly?
That’s your call. Read the ingredient list and your labels. You decide. But I strongly feel any recipe made at home can be vegan if you try hard enough.
How? Because you literally have the power to add or subtract what you want out of a recipe. So, you get to decide if it’s one you’ll want to consume.
Finally, we have an unreal amount of information right at our fingertips! You’re reading this on the internet, right? Use it to help you research substitutes for ingredients listed below like milk and butter.
You can do this, friend! Just like how I had to find an alternative to boxed pancake mix, I’m certain you can find alternatives to fit your diet.
Eggless Pancakes From Scratch
Ingredients:
- unbleached flour (I like Arrowhead Mills {not sponsored})
- sugar
- cinnamon
- baking powder
- salt (Redmond Real Salt)
- milk
- oil of choice (such as avocado or olive oil)
- water
- melted butter
Instructions:
First, whisk dry ingredients together. Then you’ll add wet ingredients to dry. Mix them together well. Some lumps in batter is okay. Let the batter sit for 2 minutes.
I’ve found these pancakes are best when cooked in a cast iron pan. Certainly give adding berries or chocolate chips into the batter a consideration.
Finally, serve pancakes with maple syrup or warm strawberry jam. Enjoy the deliciousness!
Is This Eggless Pancakes From Scratch Recipe Worth The Extra Time?
If you haven’t figured it out yet, I give this answer a resounding yes. All of these ingredients we keep in the pantry or refrigerator all the time. Five to 6 extra minutes of our life to prepare a recipe we know every single ingredient for, has no added and unnecessary food coloring or preservatives, and includes no allergy warnings for my child are 100% worth it to me.
Eggless Pancakes from scratch recipe is definitely worth a few extra minutes. If you’ve got kids, encourage them to help you make them! You can even sneak in a fractions lesson at the same time.
Eggless Pancakes From Scratch
Ingredients
- 1 cup unbleached flour
- 1 teaspoon sugar
- 1/4 teaspoon cinnamon
- 2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 tablespoon oil of choice
- 1 tablespoon of water
- 1 teaspoon of vanilla extract
- 2 tablespoons of melted butter
Instructions
- Whisk dry ingredients together.
- Add wet ingredients to dry.
- Mix well, some lumps in batter is okay.
- Let sit for 2 minutes.
- Pour 1/8 cup of batter into pan for each pancake. Give or take, depending on your preference of pancake size.
- Top pancake stack with a pat or two of butter.
- Serve with maple syrup or warm strawberry jam.
