Smoked Mac and Cheese

Southern, smokey, and savory, this smoked macaroni and cheese recipe is so good, you'll definitely be invited back to the cook out. Just be sure you bring another pan of this with you.

Ingredients
  

  • 2 cups elbow macaroni noodles
  • 1 cup cheddar cheese shredded
  • 1 cup Colby jack or pepper jack shredded
  • 1/2 block cream cheese sliced or chunked
  • 1/2 stick butter
  • 3 cups milk
  • 2 cups heavy whipping cream
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp red pepper flakes or cayenne double if you like heat
  • salt and pepper to taste

Equipment

  • 1 9x13 casserole pan
  • 1 wood pellet smoker grill

Method
 

  1. First, get the smoker grill preheating to 250 degrees and then melt butter in a sauce pan on the stove (or microwave).
  2. Next, grab a 9x13 casserole pan that is grill safe. Begin by pouring dry macaroni noodles in the pan and evenly spread out.
  3. Then pour melted butter all over the noodles as best you can and then use a knife to cut small slices or chunks out of the cream cheese to spread around the casserole pan in different spots.
  4. Now sprinkle on the shredded cheeses.
  5. Next, pour in the milk and the heavy whipping cream.
  6. Then sprinkle on your spices including the salt and pepper and use a wooden spoon to give it a good mix.
  7. Put the casserole pan on the smoker grill and close the lid.
  8. Set a timer for 30 minutes. Use the wooden spoon to carefully give the Mac and cheese another stir to help incorporate the cream cheese.
  9. Set the timer for 1 hour and 20 minutes more to finish cooking. Then remove the smoked Mac and cheese from the grill and allow it to cool slightly before serving.
  10. Optional: save half the cheddar cheese from this recipe to add after smoking. Sprinkle the cheese over the Mac and cheese and put the pan in the oven on broil for 2 minutes or until golden brown and bubbly like you like it.
