What meats is all meat seasoning good on?
- burgers
- steaks as a dry rub
- whole chicken, to be roasted or smoked
- ribs
- venison

- smoked turkey for Thanksgiving
- probably more meats I haven’t even tried yet (think: lamb, goat, veal)

When applying to a whole meat (not a ground meat like burgers), add olive or avocado oil to the meat first. Butter is an option too.
These oils/fats helps add to the delightful juices being made as your meat cooks. It also helps the meat spice blend to adhere to the meat itself.
If cooking in a roasting pan or sheet pan, after the meat is done; spoon up those delicious juices and drizzle back over the meat before and/or after slicing and cutting. Zero waste cooking from scratch!
Save those pan drippings!
Alternatively, to save the drippings or juices from your roasted, grilled, or smoked meats; pour drippings into a another mason jar to store in the refrigerator.
When you cook a pot of soup next, especially a vegetable beef soup; add a healthy spoonful of your drippings to the pot for a flavor explosion! In the best way.
Layer on the drippings in your drip jar from different meats you cook! This will add more dimension to the flavors you add to your soup pot.
How this flavorful meat spice blend got started
This all meat seasoning started as our family’s burger seasoning for summer grilling time.
One Saturday I got lazy when it was time for the steaks to be marinated and decided the burger seasoning with a splash of liquid aminos would do. And it did!
Then another time we wanted to smoke a chicken on the wood pellet grill. Burger seasoning to the rescue! And it was divine.
So I decided to make a big batch of my burger seasoning and turn it into All Meat Seasoning. Haven’t looked back since.
Homegrown herbs will always win

This all meat seasoning calls for a few herbs. The ones I grow and air dry each year. Win-win!
The homegrown herbs in this all meat seasoning can easily be grown in your garden beds or containers inside your home.
If you live in an HOA that doesn’t allow gardens, rosemary bushes are a great way to hide some edible food in your landscape. Even sage looks a lot like lamb’s ear.
Where there is a will to eat more homegrown food, there is a way!

Why make this all meat seasoning homemade when there are a hundred choices in the spice aisle at the grocery store?

1- the ingredient list.
If you’ve been on this blog for any amount of time, you’ll know ingredient list reading is a part of our life due to food allergies. That reading lead to asking questions of unpronounceable ingredients which lead to research which lead to now I have a thousand dishes to wash every day because every meal in our home needs to be from scratch.
One popular complete seasoning brand has this listed as their ingredients: Dehydrated Vegetables (Garlic & Onion), Spices, Salt, Monosodium Glutamate, Spices, Herbs. “Spices”… such as? Interesting. Monosodium glutamate AKA MSG.
Another well known brand’s “garlic parmesan” seasoning has 12 ingredients and that’s NOT counting what’s listed in parenthesis after Parmesan!

Many of these specialty, ready-made seasonings can run $1-2 per ounce. Most bottles are 4 ounces or a little better. That can be $4-8 per bottle.
When you’re smoking or roasting a big meat like a whole chicken or a turkey, it’s easy to use 4 ounces or more of seasoning for that one meat! A whole bottle for one large chunk of meat!
Those dollars add up when you cook from scratch often at home to, wait for it… save money!
Yes, you’ll need to source your individual ingredients first in order to whisk up this specialty meat spice blend but I do believe you’ll find this 5 minute seasoning-making task worth it!
How do I package up all meat seasoning?
Best practice is a mason jar or an up-cycled jar like a washed salsa jar or something similar with a tight fitting lid.
If you use an up-cycled spice jar from a previous spice, you will need likely 3-4 of those jars for this recipe.
These jars are easy to come by and generally free or cheap.

How long will all meat seasoning store in the spice cabinet?
All meat seasoning will last just as long in the spice cabinet as any other spice you have in there.
I generally like to replace my air-dried homegrown herbs like oregano, basil, parsley, sage, and thyme yearly as I grow them each year. Overtime the flavor will dissipate from the herbs leaving a less flavorful herb.
A good time frame for all meat seasoning shelf life is one year. You’ll use up one jar long before a year, though. I guarantee it!
How much seasoning should I use?

- For burgers to grill, use 1 1/2 tbsp of all meat seasoning per pound. Mix it in well before pattying the burgers.
- For a whole turkey (approximately 15 lb) to smoke on the wood pellet grill, anywhere from 1/4-1/2 cup of seasoning to coat the entire turkey, including the inside cavity.
- For a whole chicken (approximately 4.5 lb), use about 1/4 cup of seasoning, give or take. Start with 1/8 cup and go up from there. Make sure all of the chicken is coated.
- For 4 pork chops or steaks, use 2 tablespoons sprinkled top and bottom of the cut.
IT IS RECOMMENDED TO MEASURE OUT WHAT YOU THINK YOU WILL USE BEFORE BEGINNING TO RUB MEAT WITH THE SEASONING.
Use a clean, dry measuring spoon or cup each time you open the all meat seasoning jar to prevent moisture or contaminates from getting inside the jar.

What cooking method is best for all meat seasoned meats?
Honestly, ALL OF THEM.
We use this seasoning regularly in smoking on the smoker grill, roasting, sautéing, grilling on a charcoal or gas grill, even seasoning ground beef in a pan for a burger bowl or busted burger.
